Illex Squid (Illex argentinus)

Common Names: Argentine Shortfin Squid, Illex Squid

Scientific Name: Illex argentinus

Origin & Habitat

Illex squid is predominantly found in the southwestern Atlantic Ocean, especially off the coasts of Argentina, Uruguay, and Brazil. It inhabits continental shelf and slope waters, typically ranging from shallow coastal zones to depths of 200 meters. This species is highly migratory, following seasonal patterns tied to spawning and feeding.

Illex squid plays a crucial ecological role in marine food webs, serving as prey for larger fish, marine mammals, and seabirds, while also being a major target species for commercial fisheries.

Physical Characteristics & Behavior

Illex squid has a streamlined body with a mantle length usually ranging between 15 to 30 cm, though individuals can grow larger. It features short fins and a reddish to brown coloration that helps camouflage in its pelagic environment. Known for its rapid swimming ability and agility, Illex squid is an active predator feeding on smaller fish and crustaceans.

This squid is also prized for its fast growth rate and short lifespan, which make it a sustainable choice for fisheries when managed properly.

Fishing & Processing

Illex squid is mainly caught using trawl nets and jigging methods during peak migration seasons. Once harvested, the squid is immediately processed to maintain quality, including gutting, cleaning, and freezing. The product is often sold frozen, either whole or as cleaned tubes and tentacles, catering to diverse market demands.

Our processing facilities follow strict hygiene protocols and maintain the cold chain to ensure freshness and safety for international export.

Size & Packaging

Illex squid products are typically available in whole frozen form or cleaned portions such as tubes and tentacles. Sizes vary, but mantle lengths usually range from 15 to 30 cm.

Packaging includes PE-lined cartons weighing between 10 to 25 kilograms, designed for bulk handling and retail distribution. Vacuum-sealed options and IQF portions are also offered depending on customer needs.

Nutritional Profile

Illex squid is a rich source of high-quality protein with low fat and calories, making it a healthy seafood choice. It contains essential amino acids, omega-3 fatty acids beneficial for heart health, and important minerals like selenium, zinc, and iron. Additionally, squid provides vitamin B12 and phosphorus, supporting energy metabolism and bone health.

Due to its low fat content and high protein, Illex squid is favored in diets focused on lean nutrition.

Culinary Uses

Illex squid’s tender texture and mild flavor make it popular in a wide range of culinary preparations around the world. Common uses include:

  • Grilling or barbecuing whole or in rings with simple seasoning
  • Frying as crispy calamari rings, a favorite appetizer
  • Adding to seafood stews, soups, and paellas for rich flavor
  • Stuffing and baking with herbs, breadcrumbs, and vegetables

Cooking tip: Avoid overcooking Illex squid as it can become tough; quick, high-heat methods preserve tenderness best.
